Easy Samosa Recipe

So, just like everyone else in the world, I've been watching the Great British Bake Off and this week I was inspired by the samosas that Rav made and so today I'm bringing you my own version. These samosas are really easy to make and take about 45 minutes from start to eating! Sow without further ado lets go...


Firstly you want to collect all your ingredients together, so here's what you'll need:

-Filo pastry (3 sheets)
-1 potato
-1 carrot
-1/2 cup of peas (frozen or fresh)
-1 tsp of Tikka curry powder (or garam masala powder)
-1 tsp of curry paste
-1 tsp of ground coriander
-Some sunflower oil


So firstly you want to dice your carrot and your potato. It's important to make sure the pieces are quite small so you can pack as much as possible into the samosas, without them becoming too lumpy.


Once you've done this boil some water in a saucepan. Once the water is boiling add your vegetables and cook them for about 5 minutes.


Then add your peas and cook for a further 3 minutes.


Once that's all cooked put the vegetables into a bowl and stir in the curry powder, the ground coriander and the curry paste. Be a little bit aggressive with the string because you want to slightly bash the edges of the potato and carrot. This will help ensure the curry flavour can be tasted throughout the samosa.


Next you want to lay out one of the layers of filo pastry. Cover the others that you aren't using or they'll dry out.
Cut the layer into three, long ways.
Then lightly brush on some of the oil. You don't want them to be covered in it but just a little on the centre will help to make them golden brown in the oven and will help the veg stick.


Place a small amount of the ingredients onto one end of one of the strips. Use your fingers to bunch it together a little.


Then fold the bottom corner to the top of the strip. This will create a triangle. 


Then fold the top edge so that it's facing the other end of the strip.


Continue folding in these different directions to ensure that there aren't any open ends and you reach the end of the pastry strip.


Any overhang you can just fold on the rest of the pasty and secure with a little oil.


Place all of the parcels onto a baking tray and place in an oven. The oven should be 195C.


Cook for 15 minutes, or until golden brown on top.
Remove from the oven and leave to cool before tucking in!
